Here's a list of recipes offered by the Montagne Coupée Executive Chef Daniel Komarnicki.

Tremendous Blackberry Creme Brulee

Ingredients :

 

  • 300 gr of blackberries
  • 6 eggs yolks
  • 150 gr of sugar
  • 1 vanilla pod
  • 100 gr of brown sugar
  • 2 cups of cream 35%
  • 1 cup of milk

 

Preparation :

  • In a bowl, mix egg yolks, sugar and vanilla until mixture whitens. Wisk in hot milk and cream.

  • Spread half of blackberries in small dishes previously rinsed in cold water but not (wiped) dried. Cover the preparation.

  • Place dishes in warm double boiler, slide in non-heating oven. Set oven at 160 degrees celcius and cook for 20 minutes.

  • Once cooked, let stand, place dishes in refrigerator during 4 hours.

  • Before serving, sprinkle each dish with remaining coarsely chopped blackberries mixed with brown sugar.
  • Broil fo 20 sec. or until golden.
