Here's a list of recipes offered by the Montagne Coupée Executive Chef Daniel Komarnicki.

Tremendous Blackberry Creme Brulee |
Ingredients :
- 300 gr of blackberries
- 6 eggs yolks
- 150 gr of sugar
- 1 vanilla pod
- 100 gr of brown sugar
- 2 cups of cream 35%
- 1 cup of milk
Preparation :

In a bowl, mix egg yolks, sugar and vanilla until mixture whitens. Wisk in hot milk and cream.

Spread half of blackberries in small dishes previously rinsed in cold water but not (wiped) dried. Cover the preparation.

Place dishes in warm double boiler, slide in non-heating oven. Set oven at 160 degrees celcius and cook for 20 minutes.

Once cooked, let stand, place dishes in refrigerator during 4 hours.
- Before serving, sprinkle each dish with remaining coarsely chopped blackberries mixed with brown sugar.
- Broil fo 20 sec. or until golden.
