Celeriac salad, arugula and green apples, "carcajou roots" mustard dressing and daisy buds, a few grilled pumpkin seeds
Ingredients:
Few arugula leaves
250gr of celeriac
150gr of green apple (julienne)
Grilled pumpkin seeds to taste
Dressing:
100ml Carcajou root mustard
100 ml plain yogurt
Citrus juice (1/2 of grapefruit, 1 orange, 1 lime, 1 lemon
75gr of daisy buds
Salt, pepper to taste
Method
Mix all dressing ingredients
Place a few arugula leaves in a serving bowl
Mix juliennes of apple and celeriac with some dressing
Place over arugula in bowl and sprinkle with pumpkin seeds
